* This honey was collected by bees working on a public lands restoration project.  They are pollinating native flowers, sown to rebuild a landscape in Southern Oregon that has been severely diminished since the 19th century.  Through this project, we are also researching what species of native flowers do an exceptional job feeding honey bees, as well as bumble bees and native solitary bees.

Tasting Notes: This honey is light and easy.  Poison oak nectar gives it a mildly herbaceous note, which harmonizes perfectly with the remaining soft sweetness.  It sets on your palate like the summer sun settling bees and butterflies on the prairie in its wake as it disappears.

Tasting tip: Spoon this honey into your favorite floral tea.

With sweet musk-roses and with eglantine.”
